The viral sensation will launch its first Victorian location at Chadstone Shopping Centre on Thursday, May 7. Brooki Bakehouse Australian CEO Andrew Head said the brand had been inundated with requests from Victorian fans. “Melbourne has an incredible foodie culture, and we have had so much demand from our community to go there,” Mr Head told News Corp Australia. “An opportunity came up with our partners at Chadstone, so naturally we jumped at it. Picture: Supplied The move marks a major step in the company’s national expansion. Founded by Brooke Bellamy in 2022, the brand currently operates kiosks and a flagship store in Fortitude Valley, with a presence at Sydney Airport and internationally in the United Arab Emirates. Mr Head said the Melbourne launch was just the start of the brand’s Victorian footprint. “We want to replicate all the great things we’ve done in Brisbane and show our supporters in Victoria what that looks like,” he said. “We also have some further locations coming up in Melbourne as well in the pipeline.” The cult bakery promises the same “theatre” experience that has seen queues wrap around the block at its Brisbane flagship store. Ms Bellamy will be on-site from Thursday to Saturday to personally welcome customers. While Brooki Bakehouse is eyeing further international expansion, Mr Head said the focus remains on delivering physical stores where the community is. “The intention is absolutely to continue expanding and to deliver physical stores where our community are, naturally that takes time and any rollout will be considered and in line with our overall strategy,” he said. “Certainly we would love to go to all four corners of the globe when the time is right.
